Cookie Recipe Exchange...

As far as I know, Patricia G on Yahoo 360 started the Cookie Recipe Exchange... I am copying my recipe here for Multiply!

I am going to share with you a recipe that's not really cookies, but is just as delicious! They're called Peanut Butter Squares. This recipe was shared to me by my mom. It was (may still be) the most sought out dessert at our local school. (The picture above are not mine... but they are the same thing!)


Peanut Butter Squares:

1 & 1/2 lbs Powder Sugar (to cut recipe in 1/2 would be 5 & 1/4 cups... 1/4 is 2 & 1/2 cups)
3 cups Peanut Butter
(to cut recipe in 1/2 would be 1 & 1/2 cups... 1/4 is 3/4 cups)
2 sticks (1 cup) butter or margarine (to cut recipe in 1/2 would be 1/2 cup (1 stick)... 1/4 is 1/4 cup (1/2 stick)
1 cup brown sugar (to cut recipe in 1/2 would be 1/2 cup... 1/4 is 1/4 cup)

Mix all together & press into 9x13 or deep cookie sheet. Chill, until a little firm to, top with...

Chocolate Frosting:
2 lbs Powder Sugar
1 cup cocoa
1 stick butter.

Mix until right consistency to spread.
If too dry... dribble little milk to make it smoother. (Careful not to put too much in, because then it gets too thin!) Dribble little in at a time. Mixing in between until you get it the way you want it.

Then once frosted cover with plastic wrap & chill until firm. (If you can wait! LOL) (To shorten the time put in freezer for about 1/2 hour... just remember not to leave them there.)
Then cut to suit & enjoy :)
I like to store them in the fridge to keep them firm. Also, after cutting store in a air tight container, so they won't dry out.

(I have a note on my card this frosting recipe makes more than needed. But it depends on how thick you want to frost the squares. You can always put the extra in a sealed container & put in the fridge for later. Or use it on cupcakes or brownies, or what ever.)
